Immune Boosting Smoothie

In our house, smoothies are pretty much daily occurrences.  We either have them for snacks or for quick, on the go, breakfasts all year long.  It’s quite common in our house to make a big batch of smoothie in the morning so we have enough for leftovers to snack on throughout the next 24 hours or so.  Leftover smoothies are good in the fridge for about 24-36 hours, I find.  They just need a little shake to refresh and remix.

With leftover smoothies, I’ll make snack size smoothie bowls, mixing leftover smoothie with a bit of yogurt to make it a bit thicker so it can be eaten like pudding and then I will top it with unsweetened shredded coconut, chopped nuts, mini chocolate chips, fresh fruit, or gluten free granola.  Sometimes, I’ll top it with gluten free cookie crumbs too.

This smoothie is packed with immune boosting foods such as ginger and kefir so it is perfect for the fall and winter season to help prevent the cold and flu.

Mango Kiwi Kefir Smoothie

Serves: 1

  • 2 small kiwi, peeled
  • 3/4 cup frozen mango
  • 1 cup spinach
  • 3 TBP hemp hearts
  • 0.5″ ginger root, skin and all (start with half this amount if new to using ginger in smoothies or omit if you do not like ginger)
  • 1/2 cup plain kefir
  • 1/2 cup water

Blend all ingredients together in a blender until smooth.  Enjoy!
